PORTLAND, Ore. (KOIN) — Wayne Cannon made an unusual move in the Portland restaurant scene – he went from brick-and-mortar to a food cart.
Cannon’s Rib Express opened at a food cart pod on NE MLK Blvd and Beech Street in April 2019. He had owned a fixed location on NE Killingsworth for over 30 years before.
“I figured the food cart thing is taking over Portland, so if you can’t beat them, join them, so here I am!” he said.
Cannon said the rent at his old locations became too high so he decided to move.
“It’s turning out to be the wiser move because of the economics of it,” he said. “Fortunately my customer base is finding me over here and it’s turned out to be very successful.”
Cannon makes his sides of greens, beans, potato salad and mac and cheese from scratch. His meat and chicken is smoked for hours and then moved to the grill. His barbeque sauce, however, is his “secret weapon.”
“Our barbeque sauce is made by ourselves and it’s a total secret. We don’t give that one up,” he said.
