PORTLAND, Ore. (KOIN) — Kees #Loaded Kitchen is KOIN’s Cart of the Week.
Kiauna Nelson opened the cart nearly four years ago and has grown to be a classic in the Portland food cart world.
Nelson has no set menu and “simply cooks what I feel like cooking.” There is always fried chicken and mac & cheese, however.
The rotating specials often include ribs coated in a homemade barbeque sauce and collard greens.
“I just wanted to have a really large loaded plate that included dessert, a drink and fresh-baked bread for one price,” she explained.
The cart has become so popular that when open Thursday through Sunday it sells out daily.
“I’m supposed to be open from 12-5 but absolutely never have food at 5,” she said.
As for how successful she has become, Nelson said she wasn’t expecting it.
“I didn’t expect any of this but I’m happy it happened. I’m happy people accept me for me. I’m happy to be here, to cook food all the time.”
